is there a way to find ink stats such as your most popular used ink brand, color, etc. ditto for pens.

your best bet right now is downloading the data (using the “export” buttons) and do that kind of analysis in Excel yourself. These files should contain most data that you need.
I do however have features like this in my roadmap as I want to see that myself. However, I can’t tell you when I’ll get around to it.
